With summer just around the corner, we’re all prepping to shed our winter layers and get our body beach-ready for some fun in the sun. As the saying goes, summer bodies are made in spring. But it’s often easier said than done with life getting in the way it’s difficult to stick to our goal of a healthy and balanced diet. Additionally, with school holidays in full swing we’re looking to refuel our kids with a healthy and hearty meals. Luckily we’ve got some easy and quick recipes you can make at home from the fresh food people themselves; Woolworths!

We’ve compiled some of our favourite recipes and planned a day of flavourful food, so you don’t have to worry about what to cook!

Breakfast:

5 Minute Gormet Muesli (5 mins prep)

Ingredients:

  • 2 x 250g punnets strawberries
  • 1 tsp vanilla bean paste
  • 700g Woolworths Icelandic style Skyr natural yoghurt
  • 1½ cups Woolworths Classic Fruit & Nut Muesli
  • 2 tbs fresh passionfruit pulp

Method:

  • Wash, hull and mash strawberries in a small bowl with a fork.

  • Mix vanilla bean paste with yoghurt.

  • Place 1/3 cup of muesli at the bottom of four bowls.

  • Divide the mashed strawberries across the muesli followed by a quarter of the yoghurt.

  • Drizzle ½ tbs of passionfruit pulp over each dish and a few extra sprinkles of muesli.

Morning Snack:

Almond Banana Bread (10 mins prep, 50 mins cook)

Best prepared the night before to snack on for a mid-morning treat or afternoon tea!

Ingredients:

  • 3 bananas, mashed, plus 1 banana, halved, to decorate
  • ½ cup vegetable oil
  • 2 free range eggs
  • 1 cup brown sugar, plus 2 tbs extra, to garnish
  • ½ cup almond milk
  • 1½ cups self-raising flour
  • 1 tsp vanilla bean paste
  • 1 tsp cinnamon
  • 1 cup walnuts, roughly chopped

Method:

  • Preheat oven to 170°c.

  • Line a loaf tin with baking paper.

  • Combine ingredients in a large bowl, and mix until just combined.

  • Transfer batter into prepared loaf tin and decorate with halved banana.

  • Sprinkle banana with remaining brown sugar and bake 50 minutes, or until a skewer inserted into the middle comes out clean.

Lunch:

Teriyaki Salmon Poke Bowl (15 mins prep, 10 mins cook)

Ingredients:

  • 2 x salmon fillets, skin off with Woolworths Bag & Bake with teriyaki & ginger sauce
  • 3 cups cooked brown rice
  • 1 packet Woolworths little gem lettuce combo, trimmed
  • 1 carrot, spiralised
  • 1 cucumber, spiralised
  • 1 avocado, finely sliced
  • 2 sheets nori, roughly sliced
  • ½ bunch radishes, finely sliced
  • ¼ cup pickled sushi ginger, to garnish
  • soy sauce, to serve

Method:

  • Preheat oven to 180°c.

  • Place bag & bake salmon on a tray and bake for 10 minutes.

  • Rest for 5 minutes, then place fish in a bowl, and flake using two forks.

  • Divide rice between bowls and arrange lettuce, carrot, cucumber, avocado, nori, radish and flaked salmon around the bowls.

  • Drizzle over any extra sauce from bag & bake bag and serve with pickled ginger and soy sauce.

Dinner:

Thai Beef Salad with Rice Noodles (15 mins prep, 5 mins cook)

Ingredients:

  • 250g rice vermicelli noodles
  • 2 x 315g Woolworths Thai style salad kits
  • 350g sliced rare roast beef (from deli section)
  • 250g punnet cherry tomatoes, halved
  • 1 large Lebanese cucumber, halved lengthways, thinly sliced
  • 1 bunch coriander, leaves picked

Method:

  • Place noodles in a large bowl and cover with boiling water.

  • Stand for 5 minutes or until noodles are soft.

  • Drain well. (if preferred, cut noodles into smaller pieces with scissors).

  • Place salad from kits in noodle bowl.

  • Shred beef and add to salad with tomato, cucumber and 3/4 of coriander.

  • Add dressing from salad kit and toss until combined.

  • Serve sprinkled with crispy shallots from kit and remaining coriander.
